Stir-Fried Orange Beef

What you need and what you have to do

Ingredients

1 pound lean beef, 4 dried chilies split lengthwise, 1 Tbs fresh orange peel coarsely chopped or 2 tdp dried soaked orange peel, 1/2 cup oil

Marinade: 2  tsp dark soy, 2 tsp dry Sherry or wine, 1 tsp fresh ginger, 1 tsp cornstarch, 1 tsp sesame oil

Sauce: 1/2 tsp ground Szechwan peppercorns, 1 tsp dark soy, 1/4 tsp salt, 1 tsp sugar, 1/2 tsp sesame oil

Preparation

1 Cut beef in thin narrow 2 in (5cm) strips across the grain.
2 Marinate 20 minutes.
3 Mix sauce ingredients.

Extras

Method

1 Heat oil in hot wok
2 Remove meat from marinade and stir fry in very hot oil 1 - 2 minutes until slightly crisp
3 Drain in sieve
4 Remove all but 1 tsp oil from wok
5 Re-heat wok, add chilies and stir fry 10 seconds
6 Return beef to wok, add orange and sauce and stir fry another four minutes

Serving

Serve immediately
