Sauce: 3/4 tsp hot mustard, 1 1/2 tsp brown sugar, 2 Tbs light soy sauce, 2 Tbs dark soy sauce

Mix flour and water to smooth consistancy and beat in eggs 2 Cut sirloin steak into small bite size pieces and add to egg mixture 3
Chop watercress, remove any coarse pieces and add together with spring onions to egg mixture, too 4 Mix sauce ingredients

Method

Heat 3 Tbs oil in a frying pan over medium heat. 2 When hot dip out 1 Tbs of mixture into pan (including some of the egg mix).. 3 Cook 2 - 3 minutes each side until lightly browned. 4
Remove to a hot plate and keep warm until all omelettes are done.
