Stir fried lamb with garlic

What you need and what you have to do

Ingredients

2 pounds lean lamb steak or fillet, 2 Tbs oil, 2 Tbs spring onion or leek, thinly sliced, 3 cloves garlic, thinly sliced, 1/2 tsp fresh ginger, minced onion flower for decoration

Marinade:
2 tsp ginger sherry, 2 tsp dark soy, 2 tsp light soy, 1/2 tsp sesame oil, 2 Tbs chicken stock

Preparation

1 Cut lamb into thin slices (about 2 inches long)
2 Marinate about 20 - 30 minutes, drain and reserve liquid

Extras

nothing special

Method

1 Heat oil in wok.
2 Put in lamb and half of the marinade.
3 Stir fry about 2 minutes.
4 Add onion, ginger and garlic.
5 Stir fry another 3 - 4 minutes.

Serving

Put on hot serving plate and decorate with an onion flower or minced spring onion.
