1 - 1.5 pounds lean spareribsMarinade: 4 Tbs sugar, 1 tsp salt, 2 Tbs light soy, 1 tsp Whiskey or Sherry, 1 Tbs
hoi-sin paste, 1 tsp sesame paste or sesame sauce, 1 Tbs ground soy bean paste (preferably brown bean), 1/8 tsp white pepper, Ginger juice from 8 slices of ginger Glaze: 4 Tbs malt sugar or golden syrup, 1 tsp light
soy, 3 Tbs water |

Cut into individual ribs. Put them on a serving platter decorated with parsley or onion flowers.Serve accompanied with soy
sauce, mustard, hoi-sin sauce and sweat and sour sauce. Note: Spareribs are finger food, therfore supply guests with finger bowls containing scented warm water or green tea. |
