Chinese Style Barbecue Spareribs

What you need and what you have to do

Ingredients

1 - 1.5 pounds lean spareribs

Marinade: 4 Tbs sugar, 1 tsp salt, 2 Tbs light soy, 1 tsp Whiskey or Sherry, 1 Tbs hoi-sin paste, 1 tsp sesame paste or  sesame sauce, 1 Tbs ground soy bean paste (preferably brown bean), 1/8 tsp white pepper, Ginger juice from 8 slices of ginger

Glaze: 4 Tbs malt sugar or golden syrup, 1 tsp light soy, 3 Tbs water

Preparation

1 Mix marinating ingredients in a large bowl. Brush onto both sides of ribs
2 Marinate overnight in refrigerator

Method

1 Heat oven to 245 oC. Cook ribs for 10 minutes. Turn them and baste
2 Turn oven down to 175 oC and keep cooking for  another 1/2 hour (turn ribs and baste after 10 minutes)
3 While ribs are in oven mix the glaze ingredients in a small pot. Cook stiring constantly until sugar or syrup melts
4 Remove from oven and coat both sides of ribs with glaze
5 Heat your grill and broil ribs on both sides till brown (approximately one or two minutes on each side)

Serving

Cut into individual ribs. Put them on a serving platter decorated with parsley or onion flowers.

Serve accompanied with soy sauce, mustard, hoi-sin sauce and sweat  and sour sauce.

Note: Spareribs are finger food, therfore supply guests with finger bowls containing scented warm water or green tea.
