Chicken Liver with Cashew Nuts

What you need and what you have to do

Ingredients

1 pound chicken livers, 8 sliced water chestnuts, 2 oz. sliced bamboo shoots, 3 Tbs oil, 10 small pearl onions (either fresh or frozen), 1 1/2 oz. unsalted cashew nuts

Sauce: 1/2 cup chicken stock, 1/2 tsp dark soy, 1 Tbs Hoisin sauce, 1 tsp corn starch

Preparation

1 drop livers in salted boiling water and cook through (2-3 minutes).
2 Mix sauce ingredients.

Extras

nothing special

Method

1 Heat oil in wok.
2 When hot add onions and stir fry until golden.
3 Add livers and stir fry 1 minute.
4 Add chestnuts and bamboo shoots and stir fry one more minute.
5 Add sauce, bring to a boil and cook one minute.
6 Stir in cashew nuts.

Serving

Turn on to a serving platter and garnish with parsley.
