Shredded Chicken with Sesame Seeds

What you need and what you have to do

Ingredients

1 pound chicken breast, 1 cup oil, 2 Tbs sesame seeds

Marinade:
1 egg white, 1/2 tsp salt, 2 tsp corn starch

Sauce:
1 tsp dark soy sauce, 1 tsp dark vinegar, 1/2 tsp chilli bean sauce, 1/2 tsp oil, 1 tsp sugar, 2 tsp wine or sherry, 1/2 tsp roasted cechwan peppercorns, 2 tsp spring onion, finely chopped

Preparation

1 Cut chicken breast into fine shreds (about 3 inches long)
2 Marinate in refrigerator about 20 - 30 minutes

Method

1 Heat oil in wok until moderately hot.
2 Stir fry chicken strips for 1 minute, remove and drain on paper towel.
3 Reserve oil. Clean wok, re-heat and return 1 Tbs oil.
4 Cook sesame seeds 1 minute until light brown
5 Add sauce and bring to a boil. Add chicken and stir fry for another minute.

Serving

Serve hot.
